Chilcano de Anís

Ingredients

2 oz. Pisco Quebranta
2 to 3 drops of Angostura Bitters
¾s of an oz. of home made Anise Syrup (Sugar, 50 Star Anise grains)
5 or 6 grains of Star Anise
Splash of Lemon Juice
Ginger Ale
Ice Cubes   

Preparation

Homemade Anise Syrup: prepared by boiling 50 grains of Star Anise in water.
Add the same proportion of sugar as the Star Anise grains until water reaches a second boil.
Leave to rest for 24 hours.
Take out the Anise, some of the boiled grains will be added to the drink later.

Cocktail

Pour Angostura Bitters, Lemon Juice, home made Anise Syrup, Ice, Pisco Quebranta and Ginger Ale into a tall glass.
Add a few Star Anise grains to the mix and stir.

Instead of anise syrup, I used a anise liquor, and it was fantastic. Very refreshing. With the combination of the flavors of the pisco, anise and ginger ale, it had a very unique flavor. I would make it again.
