Every Wednesday and Thursday for lunch during the winter months the El Perroquet restaurant in Lima’s exclusive Country Club Hotel is presenting a buffet of traditional Sancochado. Hearty and delicious, this wintertime classic is part of every Peruvian’s fondest memories.
Known by different names in different regions of the country, timpu in Cusco, puchero in Arequipa, sancochado in Lima, this hearty soup has been prepared by locals long before the Spanish arrived and is considered a principle recipe of Peruvian cuisine. Today’s sancochado is a combination of this mother recipe with Spanish influences.
At El Perroquet garbanzo beans float in a flavorful clear broth in which all of the soups ingredients have been cooked to perfection. The tender meats and vegetables are served separately along with seven different sauces to create your own delicious combinations.
The buffet includes servings of potato, yucca, sweet potato, pumpkin, leek and fava beans. Don’t be shy when choosing from the wide variety of meats used in the creation of the broth, chicken, smoked ham, veal, four different types of sausages and beef tongue blend to give this dish maximum flavor. We enjoyed a lovely Septima 2009 Malbec from Mendoza recommended by the sommelier with our meal.
A choice of dessert is also included in the price. I particularly enjoyed the cake frosted with caramel frosting and coated with sliced almonds. Also available are rice pudding and mazamorra morada.
Dining at the lovely Country club hotel is always a special treat. The excellent service, elegant old world setting and talent in the kitchen make even a simple comfort food like sancochado an event to remember.

I'm not sure but I ate thimpu in Puno long time ago. What I remember it was kind of sancochado but they used the head of a lamb. In spanish it was called "caldo de cabeza de cordero".
